Ingredients

  • Graham cracker crumbs - 100 grams
  • Unsalted butter (melted) - 40 grams
  • Granulated sugar - 30 grams
  • Cream cheese (softened) - 200 grams
  • Pumpkin puree - 100 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 175°C (350°F).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and 15 grams of granulated sugar. Mix until well combined.
  3. Press the mixture evenly into the bottom of a small baking dish (about 20x20 cm) to form the crust.
  4. In another bowl, beat the softened cream cheese until smooth. Add in the remaining sugar, pumpkin puree, egg, vanilla extract, cinnamon, nutmeg, and salt. Mix until everything is well incorporated.
  5. Pour the pumpkin cheesecake filling over the prepared crust and spread it evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the center is set and only slightly jiggly.
  7. Remove from the oven and let it cool at room temperature for about 15 minutes, then refrigerate for at least 2 hours before slicing into bars.
