- Graham cracker crumbs - 100 grams
- Unsalted butter (melted) - 40 grams
- Granulated sugar - 30 grams
- Cream cheese (softened) - 200 grams
- Pumpkin puree - 100 grams
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground nutmeg - 1/4 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 175°C (350°F).
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and 15 grams of granulated sugar. Mix until well combined.
- Press the mixture evenly into the bottom of a small baking dish (about 20x20 cm) to form the crust.
- In another bowl, beat the softened cream cheese until smooth. Add in the remaining sugar, pumpkin puree, egg, vanilla extract, cinnamon, nutmeg, and salt. Mix until everything is well incorporated.
- Pour the pumpkin cheesecake filling over the prepared crust and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the center is set and only slightly jiggly.
- Remove from the oven and let it cool at room temperature for about 15 minutes, then refrigerate for at least 2 hours before slicing into bars.
