- Pork shoulder - 500 grams
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Apple cider vinegar - 120 ml
- Honey - 2 tablespoons
- Gluten-free barbecue sauce - 200 ml
- Gluten-free hamburger buns - 2
- Coleslaw mix - 100 grams
- Mayonnaise - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 150°C (300°F).
- In a small bowl, mix together salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper to create a spice rub.
- Rub the spice mixture evenly over the pork shoulder.
- In a large oven-safe pot, heat olive oil over medium-high heat and sear the pork shoulder on all sides until browned, about 2-3 minutes per side.
- Once seared, remove the pot from heat and add apple cider vinegar and honey, stirring to combine.
- Cover the pot with a lid and transfer it to the preheated oven. Cook for about 3 hours, or until the pork is tender and easily pulled apart with a fork.
- After cooking, remove the pork from the pot and shred it using two forks.
- Mix the shredded pork with gluten-free barbecue sauce until well coated.
- In a separate bowl, combine coleslaw mix, mayonnaise, and lemon juice to make the coleslaw.
- To serve, place a generous amount of pulled pork on each gluten-free bun and top with coleslaw.
