  • Pork shoulder - 500 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Apple cider vinegar - 120 ml
  • Honey - 2 tablespoons
  • Gluten-free barbecue sauce - 200 ml
  • Gluten-free hamburger buns - 2
  • Coleslaw mix - 100 grams
  • Mayonnaise - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper to create a spice rub.
  3. Rub the spice mixture evenly over the pork shoulder.
  4. In a large oven-safe pot, heat olive oil over medium-high heat and sear the pork shoulder on all sides until browned, about 2-3 minutes per side.
  5. Once seared, remove the pot from heat and add apple cider vinegar and honey, stirring to combine.
  6. Cover the pot with a lid and transfer it to the preheated oven. Cook for about 3 hours, or until the pork is tender and easily pulled apart with a fork.
  7. After cooking, remove the pork from the pot and shred it using two forks.
  8. Mix the shredded pork with gluten-free barbecue sauce until well coated.
  9. In a separate bowl, combine coleslaw mix, mayonnaise, and lemon juice to make the coleslaw.
  10. To serve, place a generous amount of pulled pork on each gluten-free bun and top with coleslaw.
