Ingredients

  • Portobello mushrooms - 300 grams
  • Olive oil - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • BBQ sauce (dairy-free) - 100 ml
  • Corn tortillas - 4 small
  • Red cabbage (shredded) - 100 grams
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lime - 1, cut into wedges

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Clean the portobello mushrooms with a damp cloth and remove the stems. Slice the mushrooms into thin strips.
  3. In a mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Add the sliced mushrooms and toss until they are well coated.
  4. Spread the seasoned mushrooms on a baking sheet lined with parchment paper and roast in the oven for about 15-20 minutes, or until they are tender and slightly crispy.
  5. Remove the mushrooms from the oven and transfer them to a skillet over medium heat. Add the BBQ sauce and stir to coat the mushrooms evenly. Cook for an additional 5 minutes until heated through.
  6. While the mushrooms are cooking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  7. To assemble the tacos, place a generous portion of the pulled mushrooms onto each tortilla. Top with shredded red cabbage and chopped cilantro.
  8. Serve the tacos with lime wedges on the side for squeezing over the top.
