- BBQ sauce (dairy-free) - 1/2 cup
- Apple cider vinegar - 1 tablespoon

- Coleslaw mix (cabbage and carrots) - 1 cup
- Vegan mayonnaise - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Clean the portobello mushrooms and remove the stems, then shred them using a fork or your hands to create pulled mushroom pieces.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic, smoked paprika, cumin, salt, and black pepper to the skillet, cooking for another minute until fragrant.
- Add the shredded mushrooms to the skillet and cook for about 10 minutes, stirring occasionally, until they soften and release their juices.
- Pour in the BBQ sauce and apple cider vinegar, mixing well to coat the mushrooms. Simmer for another 5 minutes, allowing the flavors to meld.
- While the mushrooms are simmering, prepare the coleslaw by combining the coleslaw mix, vegan mayonnaise, and lemon juice in a bowl. Toss until well combined.
- Toast the burger buns in a toaster or on a skillet until golden brown.
- To assemble, place a generous portion of the pulled mushrooms on each bun and top with the coleslaw. Close the sandwiches and serve immediately.
