Ingredients

  • Portobello mushrooms - 300 grams
  • Olive oil - 2 tablespoons

  • Smoked paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • BBQ sauce (dairy-free) - 1/2 cup
  • Apple cider vinegar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Coleslaw mix (cabbage and carrots) - 1 cup
  • Vegan mayonnaise - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Clean the portobello mushrooms and remove the stems, then shred them using a fork or your hands to create pulled mushroom pieces.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Add the minced garlic, smoked paprika, cumin, salt, and black pepper to the skillet, cooking for another minute until fragrant.
  4. Add the shredded mushrooms to the skillet and cook for about 10 minutes, stirring occasionally, until they soften and release their juices.
  5. Pour in the BBQ sauce and apple cider vinegar, mixing well to coat the mushrooms. Simmer for another 5 minutes, allowing the flavors to meld.
  6. While the mushrooms are simmering, prepare the coleslaw by combining the coleslaw mix, vegan mayonnaise, and lemon juice in a bowl. Toss until well combined.
  7. Toast the burger buns in a toaster or on a skillet until golden brown.
  8. To assemble, place a generous portion of the pulled mushrooms on each bun and top with the coleslaw. Close the sandwiches and serve immediately.
