Ingredients

  • Beef chuck roast - 500 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Beef broth - 250 milliliters
  • BBQ sauce - 100 grams
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Soft sandwich buns - 2
  • Coleslaw mix - 150 grams
  • Mayonnaise - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Sugar - 1 teaspoon

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt and black pepper, then sear it in the skillet for about 4-5 minutes on each side until browned.
  2. Remove the beef from the skillet and place it in a slow cooker. In the same skillet, add sliced onions and minced garlic, cooking until softened, about 3-4 minutes.
  3. Transfer the onion and garlic mixture to the slow cooker with the beef. Pour in beef broth, BBQ sauce, paprika, and cumin over the beef.
  4. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender and easily shredded.
  5. Once the beef is cooked, shred it using two forks and mix it with the sauce in the slow cooker.
  6. Meanwhile, prepare the coleslaw by combining the coleslaw mix, mayonnaise, apple cider vinegar, and sugar in a bowl. Mix well and set aside.
  7. To assemble the sandwiches, place a generous portion of pulled beef on each sandwich bun and top with coleslaw. Serve immediately.
