- almond flour - 1/2 cup
- whey protein powder (vanilla) - 1/4 cup
- coconut sugar - 2 tablespoons
- baking powder - 1/2 teaspoon
- cinnamon - 1 teaspoon
- salt - 1/4 teaspoon
- egg - 1 large
- unsweetened applesauce - 2 tablespoons
- vanilla extract - 1/2 teaspoon
- coconut oil (melted) - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, whey protein powder, coconut sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk together the egg, unsweetened applesauce, vanilla extract, and melted coconut oil.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Using your hands, form the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheet.
- In a small bowl, mix 1 tablespoon of coconut sugar with 1 teaspoon of cinnamon. Roll each dough ball in the cinnamon-sugar mixture before placing it back on the baking sheet.
- Flatten each ball slightly with your palm.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
