Ingredients

  • almond flour - 1/2 cup
  • whey protein powder (vanilla) - 1/4 cup
  • coconut sugar - 2 tablespoons
  • baking powder - 1/2 teaspoon
  • cinnamon - 1 teaspoon
  • salt - 1/4 teaspoon
  • egg - 1 large
  • unsweetened applesauce - 2 tablespoons
  • vanilla extract - 1/2 teaspoon
  • coconut oil (melted) - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, whey protein powder, coconut sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the egg, unsweetened applesauce, vanilla extract, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Using your hands, form the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheet.
  6. In a small bowl, mix 1 tablespoon of coconut sugar with 1 teaspoon of cinnamon. Roll each dough ball in the cinnamon-sugar mixture before placing it back on the baking sheet.
  7. Flatten each ball slightly with your palm.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
