Ingredients

  • ripe bananas - 2 medium (approx. 250g)
  • egg - 1 large
  • Greek yogurt - 100g
  • oats - 50g
  • almond flour - 50g
  • honey - 2 tablespoons (30ml)
  • baking powder - 1 teaspoon (5g)
  • baking soda - 1/2 teaspoon (2g)
  • cinnamon - 1/2 teaspoon (2g)
  • salt - a pinch
  • chopped walnuts - 30g (optional)
  • dark chocolate chips - 30g (optional)

Steps

  1. Preheat your oven to 175°C (350°F) and grease a small loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the egg, Greek yogurt, and honey to the mashed bananas, and mix until well combined.
  4. In another bowl, combine the oats, almond flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  6. Fold in the chopped walnuts and dark chocolate chips if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the banana bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
