- egg - 1 large
- Greek yogurt - 100g
- oats - 50g
- almond flour - 50g
- honey - 2 tablespoons (30ml)
- baking powder - 1 teaspoon (5g)
- baking soda - 1/2 teaspoon (2g)
- cinnamon - 1/2 teaspoon (2g)
- salt - a pinch
- chopped walnuts - 30g (optional)
- dark chocolate chips - 30g (optional)
Steps
- Preheat your oven to 175°C (350°F) and grease a small loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Add the egg, Greek yogurt, and honey to the mashed bananas, and mix until well combined.
- In another bowl, combine the oats, almond flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Fold in the chopped walnuts and dark chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
