Ingredients
- 2 medium russet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup green onions, chopped
- 1/4 cup diced tomatoes
- 1/4 teaspoon smoked paprika
Steps
- Preheat your oven to 200°C (400°F).
- Wash the russet potatoes thoroughly and prick them several times with a fork. Rub the potatoes with olive oil, then sprinkle with salt and black pepper.
- Place the potatoes directly on the oven rack and bake for 35-40 minutes, or until tender when pierced with a fork.
- Remove the potatoes from the oven and let them cool for about 5 minutes. Cut each potato in half lengthwise and carefully scoop out some of the flesh, leaving about 1/4 inch of potato around the skin.
- Brush the insides of the potato skins with olive oil and sprinkle with salt and smoked paprika.
- Place the potato skins back on a baking sheet, cut side up, and fill each with shredded cheddar cheese.
- Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove the potato skins from the oven and top each with a dollop of sour cream or Greek yogurt, then sprinkle with chopped green onions and diced tomatoes.
- Serve warm and enjoy!
