Ingredients

  • 2 medium russet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup green onions, chopped
  • 1/4 cup diced tomatoes
  • 1/4 teaspoon smoked paprika

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the russet potatoes thoroughly and prick them several times with a fork. Rub the potatoes with olive oil, then sprinkle with salt and black pepper.
  3. Place the potatoes directly on the oven rack and bake for 35-40 minutes, or until tender when pierced with a fork.
  4. Remove the potatoes from the oven and let them cool for about 5 minutes. Cut each potato in half lengthwise and carefully scoop out some of the flesh, leaving about 1/4 inch of potato around the skin.
  5. Brush the insides of the potato skins with olive oil and sprinkle with salt and smoked paprika.
  6. Place the potato skins back on a baking sheet, cut side up, and fill each with shredded cheddar cheese.
  7. Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove the potato skins from the oven and top each with a dollop of sour cream or Greek yogurt, then sprinkle with chopped green onions and diced tomatoes.
  9. Serve warm and enjoy!
