- Russet potatoes - 2 medium (approximately 400g)
- Yellow onion - 1 small (approximately 100g)
- All-purpose flour - 3 tablespoons (30g)
- Egg - 1 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - for frying (approximately 1/2 cup or 120ml)
Steps
- Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- Grate the onion and mix it with the grated potatoes in a large bowl.
- Add the flour, egg, salt, and pepper to the potato and onion mixture, and stir until well combined.
- In a large skillet, heat the vegetable oil over medium heat until hot.
- Scoop about 2 tablespoons of the potato mixture and flatten it into a pancake shape. Carefully place it in the hot oil.
- Fry the pancakes for about 4-5 minutes on each side, or until golden brown and crispy. Repeat with the remaining mixture, adding more oil as needed.
- Drain the cooked pancakes on paper towels and serve hot with applesauce or sour cream.
