- Russet potatoes - 2 medium (about 400g)
- Yellow onion - 1 small (about 100g)
- All-purpose flour - 2 tablespoons (30g)
- Egg - 1 large
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Vegetable oil - for frying (about 1/2 cup or 120ml)
Steps
- Peel the potatoes and onion, then grate them using a box grater or food processor.
- Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible.
- In a mixing bowl, combine the grated potato and onion with flour, egg, salt, and pepper. Mix until well combined.
- Heat vegetable oil in a large skillet over medium heat until shimmering.
- Scoop about 2 tablespoons of the potato mixture and flatten slightly to form a pancake. Repeat with the remaining mixture.
- Fry the latkes for about 4-5 minutes on each side or until golden brown and crispy.
- Remove the latkes and drain on paper towels to absorb excess oil. Serve warm with applesauce or sour cream.
