Ingredients

  • 2 medium potatoes (about 400g) - peeled and grated

  • 2 large eggs
  • 3 tablespoons (45ml) vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a large mixing bowl, combine the grated potatoes and grated onion. Squeeze out excess moisture using a clean kitchen towel.
  3. In a separate bowl, whisk together the eggs, vegetable oil, salt, black pepper, garlic powder, and paprika until well combined.
  4. Add the potato and onion mixture to the egg mixture and stir until everything is evenly coated.
  5. Grease a small baking dish (about 20cm x 20cm) with a bit of vegetable oil.
  6. Pour the potato mixture into the greased dish, spreading it evenly.
