Ingredients

  • all-purpose flour - 1 cup (125g)
  • unsalted butter - 4 tablespoons (56g), cold and cubed
  • water - 1/4 cup (60ml), cold
  • salt - 1/2 teaspoon
  • potatoes - 2 medium (about 300g), peeled and diced
  • onion - 1 small, finely chopped
  • olive oil - 1 tablespoon
  • black pepper - 1/2 teaspoon
  • garlic powder - 1/4 teaspoon
  • egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add cold water and mix until the dough forms. Knead briefly until smooth, then wrap in plastic wrap and refrigerate for 30 minutes.
  3. While the dough is chilling, boil the diced potatoes in salted water until tender, about 15 minutes. Drain and mash the potatoes in a bowl.
  4. In a skillet, heat olive oil over medium heat. Sauté the chopped onion until golden brown, about 5 minutes. Add the sautéed onion to the mashed potatoes along with black pepper and garlic powder. Mix well and let cool.
  5. Preheat the oven to 190°C (375°F).
  6. On a floured surface, roll out the dough to about 1/8 inch thick. Cut into 4 squares.
  7. Place a spoonful of the potato filling in the center of each square. Fold the corners over the filling to create a pocket and pinch to seal.
  8. Place the knishes on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown. Let cool slightly before serving.
