- all-purpose flour - 1 cup (125g)
- unsalted butter - 4 tablespoons (56g), cold and cubed
- water - 1/4 cup (60ml), cold
- salt - 1/2 teaspoon
- potatoes - 2 medium (about 300g), peeled and diced
- onion - 1 small, finely chopped
- olive oil - 1 tablespoon
- black pepper - 1/2 teaspoon
- garlic powder - 1/4 teaspoon
- egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water and mix until the dough forms. Knead briefly until smooth, then wrap in plastic wrap and refrigerate for 30 minutes.
- While the dough is chilling, boil the diced potatoes in salted water until tender, about 15 minutes. Drain and mash the potatoes in a bowl.
- In a skillet, heat olive oil over medium heat. Sauté the chopped onion until golden brown, about 5 minutes. Add the sautéed onion to the mashed potatoes along with black pepper and garlic powder. Mix well and let cool.
- Preheat the oven to 190°C (375°F).
- On a floured surface, roll out the dough to about 1/8 inch thick. Cut into 4 squares.
- Place a spoonful of the potato filling in the center of each square. Fold the corners over the filling to create a pocket and pinch to seal.
- Place the knishes on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
- Bake in the preheated oven for 25-30 minutes or until golden brown. Let cool slightly before serving.
