Ingredients

  • Portobello mushrooms - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Tomato sauce - 120 ml
  • Mozzarella cheese - 100 grams, shredded
  • Fresh basil - 10 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 50 grams, fresh
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oregano - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Clean the portobello mushrooms with a damp cloth and remove the stems.
  3. In a small bowl, mix olive oil, minced garlic, salt, black pepper, and oregano.
  4. Brush the mushroom caps with the olive oil mixture on both sides.
  5. Place the mushroom caps, gill side up, on a baking sheet lined with parchment paper.
  6. Spread 60 ml of tomato sauce evenly on each mushroom cap.
  7. Sprinkle shredded mozzarella cheese over the tomato sauce on each mushroom.
  8. Top with halved cherry tomatoes and fresh spinach.
  9. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbling.
  10. Remove from the oven and garnish with fresh basil before serving.
