  • Portobello mushrooms - 2 large

  • Balsamic vinegar - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon

  • Whole wheat burger buns - 2
  • Avocado - 1 medium
  • Lemon juice - 1 tablespoon
  • Fresh spinach - 1 cup
  • Tomato - 1 medium, sliced
  • Red onion - 1/4 medium, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. In a small bowl, mix together olive oil, balsamic vinegar, garlic powder, salt, and black pepper.
  3. Brush the portobello mushrooms with the marinade on both sides.
  4. Place the mushrooms on the grill and cook for about 5-7 minutes on each side, or until tender and grill marks appear.
