Ingredients

  • Portobello mushrooms - 2 large
  • Balsamic vinegar - 4 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole grain burger buns - 2
  • Fresh spinach - 1 cup
  • Avocado - 1 medium, sliced
  • Tomato - 1 medium, sliced
  • Red onion - 1/4 medium, sliced
  • Cheddar cheese - 2 slices (optional)

Steps

  1. In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and black pepper.
  2. Remove the stems from the portobello mushrooms and brush the marinade over both sides of the mushrooms. Let them marinate for 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat. Place the marinated mushrooms on the grill and cook for about 5-7 minutes on each side, or until tender and grill marks appear.
  4. While the mushrooms are grilling, toast the whole grain burger buns on the grill for 1-2 minutes until lightly browned.
  5. Assemble the burgers by placing grilled portobello mushrooms on the bottom half of the toasted buns, topping them with fresh spinach, sliced avocado, tomato, and red onion. Add a slice of cheddar cheese if desired.
  6. Cover with the top half of the buns and serve immediately.
