Portobello Burger

- Portobello mushrooms - 2 large
- Balsamic vinegar - 4 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Whole grain burger buns - 2
- Fresh spinach - 1 cup
- Avocado - 1 medium, sliced
- Tomato - 1 medium, sliced
- Red onion - 1/4 medium, sliced
- Cheddar cheese - 2 slices (optional)
Steps
- In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and black pepper.
- Remove the stems from the portobello mushrooms and brush the marinade over both sides of the mushrooms. Let them marinate for 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Place the marinated mushrooms on the grill and cook for about 5-7 minutes on each side, or until tender and grill marks appear.
- While the mushrooms are grilling, toast the whole grain burger buns on the grill for 1-2 minutes until lightly browned.
- Assemble the burgers by placing grilled portobello mushrooms on the bottom half of the toasted buns, topping them with fresh spinach, sliced avocado, tomato, and red onion. Add a slice of cheddar cheese if desired.
- Cover with the top half of the buns and serve immediately.
