Ingredients

  • Chicken breast - 200 grams
  • Ramen noodles - 150 grams
  • Chicken broth - 500 ml
  • Soy sauce - 30 ml
  • Sesame oil - 10 ml
  • Ginger, grated - 1 teaspoon
  • Garlic, minced - 1 clove
  • Green onions, sliced - 2 stalks
  • Carrot, julienned - 1 small
  • Baby spinach - 50 grams
  • Egg - 2 large
  • Toasted sesame seeds - 1 tablespoon
  • Red chili flakes - to taste

Steps

  1. In a medium saucepan, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Add the chicken breast to the pan and cook for about 5-7 minutes on each side, or until cooked through. Remove from the pan and let it rest before slicing.
  3. In the same saucepan, pour in the chicken broth and soy sauce, bringing it to a simmer.
  4. Add the ramen noodles to the simmering broth, cooking according to package instructions, usually about 3-4 minutes.
  5. While the noodles are cooking, in a separate pot, bring water to a boil and gently add the eggs. Boil for 6-7 minutes for a soft-boiled egg. Remove and place in ice water to cool.
  6. Once the noodles are cooked, stir in the julienned carrots and baby spinach into the broth, allowing them to soften for 1-2 minutes.
  7. To serve, divide the noodles and broth between two bowls. Top with sliced chicken, halved soft-boiled eggs, green onions, and a sprinkle of toasted sesame seeds and red chili flakes.
