  • Black Pepper - 1/2 teaspoon
  • Dried Thyme - 1 teaspoon
  • Apples - 2 medium, peeled, cored, and chopped
  • Cinnamon - 1/2 teaspoon
  • Lemon Juice - 1 tablespoon
  • Water - 1/4 cup

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a small bowl, mix the minced garlic, salt, black pepper, and dried thyme to create a seasoning rub.
  3. Pat the pork tenderloin dry and rub the seasoning mixture all over the pork.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork tenderloin for about 2-3 minutes on each side until browned.
  5. Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes, or until it reaches an internal temperature of 63°C (145°F).
  6. While the pork is cooking, prepare the applesauce. In a saucepan, combine the chopped apples, cinnamon, lemon juice, and water.
  7. Simmer the apple mixture over medium heat for about 10-15 minutes, or until the apples are soft.
  8. Once soft, mash or blend the apples to your desired consistency. Remove from heat and set aside.
  9. Once the pork is done, let it rest for 5 minutes before slicing.
  10. Serve the sliced pork tenderloin with a generous spoonful of applesauce on top.
