Ingredients

  • Pork tenderloin - 300 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh rosemary - 1 teaspoon, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Balsamic vinegar - 2 tablespoons
  • Honey - 1 teaspoon
  • Low-sodium chicken broth - 100 ml

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Trim any excess fat from the pork tenderloin and slice it into 2.5 cm (1-inch) thick medallions.
  3. In a large skillet, heat olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Season the pork medallions with salt, black pepper, rosemary, and thyme. Place them in the skillet and sear each side for about 3-4 minutes until browned.
  5. In a small bowl, mix balsamic vinegar, honey, and chicken broth. Pour this mixture over the seared pork in the skillet.
  6. Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the internal temperature of the pork reaches 63°C (145°F).
  7. Remove from the oven and let the pork rest for 5 minutes before serving. Drizzle the pan sauce over the medallions before plating.
