- Pork tenderloin - 300 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh rosemary - 1 teaspoon, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Balsamic vinegar - 2 tablespoons
- Honey - 1 teaspoon
- Low-sodium chicken broth - 100 ml
Steps
- Preheat your oven to 200°C (400°F).
- Trim any excess fat from the pork tenderloin and slice it into 2.5 cm (1-inch) thick medallions.
- In a large skillet, heat olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Season the pork medallions with salt, black pepper, rosemary, and thyme. Place them in the skillet and sear each side for about 3-4 minutes until browned.
- In a small bowl, mix balsamic vinegar, honey, and chicken broth. Pour this mixture over the seared pork in the skillet.
- Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the internal temperature of the pork reaches 63°C (145°F).
- Remove from the oven and let the pork rest for 5 minutes before serving. Drizzle the pan sauce over the medallions before plating.
