- Pork Tenderloin - 400 grams
- Olive Oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh Rosemary - 1 tablespoon, chopped
- Dijon Mustard - 1 tablespoon
- Honey - 1 tablespoon
- Apple Cider Vinegar - 2 tablespoons
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Apples - 1 medium, sliced
- Onion - 1 small, sliced
Steps
- In a bowl, combine olive oil, minced garlic, chopped rosemary, Dijon mustard, honey, apple cider vinegar, salt, and black pepper to create a marinade.
- Place the pork tenderloin in a resealable bag or shallow dish and pour the marinade over it, ensuring it's well-coated. Marinate in the refrigerator for at least 15 minutes (or up to 2 hours for more flavor).
- Preheat the oven to 200°C (400°F).
- Heat a skillet over medium-high heat and add a little olive oil. Remove the pork from the marinade and sear it in the skillet for about 3-4 minutes on each side until browned.
- Transfer the seared pork to a baking dish, add sliced apples and onions around it, and drizzle a bit of leftover marinade over the top.
- Bake in the preheated oven for 15-20 minutes, or until the pork reaches an internal temperature of 63°C (145°F).
- Once done, let the pork rest for 5 minutes before slicing. Serve with the roasted apples and onions.
