- Pork spare ribs - 1 kg
- Brown sugar - 50 g
- Paprika - 1 tablespoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Apple cider vinegar - 60 ml
- Ketchup - 120 ml
- Worcestershire sauce - 30 ml
- Mustard - 1 tablespoon
- Honey - 2 tablespoons
Steps
- Preheat your oven to 150°C (300°F).
- In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper to create the dry rub.
- Remove the membrane from the back of the pork spare ribs and rub the spice mixture evenly over the ribs, ensuring they are well coated.
- Place the ribs on a baking tray lined with aluminum foil and cover with another sheet of foil to keep them moist during cooking.
- Bake the ribs in the preheated oven for 2.5 to 3 hours until they are tender.
- While the ribs are baking, prepare the BBQ sauce by combining apple cider vinegar, ketchup, Worcestershire sauce, mustard, and honey in a saucepan over medium heat.
- Bring the sauce to a simmer and cook for 10-15 minutes, stirring occasionally, until it thickens slightly.
- Once the ribs are done, remove them from the oven and increase the temperature to 200°C (400°F).
- Uncover the ribs and brush them generously with the BBQ sauce.
- Return the ribs to the oven and bake for another 15-20 minutes, basting with more sauce halfway through, until they are caramelized and sticky.
- Remove from the oven, let rest for a few minutes, then cut into portions and serve with extra BBQ sauce on the side.
