Ingredients

  • Pork spare ribs - 1 kg
  • Brown sugar - 50 g
  • Paprika - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Apple cider vinegar - 60 ml
  • Ketchup - 120 ml
  • Worcestershire sauce - 30 ml
  • Mustard - 1 tablespoon
  • Honey - 2 tablespoons

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper to create the dry rub.
  3. Remove the membrane from the back of the pork spare ribs and rub the spice mixture evenly over the ribs, ensuring they are well coated.
  4. Place the ribs on a baking tray lined with aluminum foil and cover with another sheet of foil to keep them moist during cooking.
  5. Bake the ribs in the preheated oven for 2.5 to 3 hours until they are tender.
  6. While the ribs are baking, prepare the BBQ sauce by combining apple cider vinegar, ketchup, Worcestershire sauce, mustard, and honey in a saucepan over medium heat.
  7. Bring the sauce to a simmer and cook for 10-15 minutes, stirring occasionally, until it thickens slightly.
  8. Once the ribs are done, remove them from the oven and increase the temperature to 200°C (400°F).
  9. Uncover the ribs and brush them generously with the BBQ sauce.
  10. Return the ribs to the oven and bake for another 15-20 minutes, basting with more sauce halfway through, until they are caramelized and sticky.
  11. Remove from the oven, let rest for a few minutes, then cut into portions and serve with extra BBQ sauce on the side.
