  • Pork loin chops - 2 (about 150g each)
  • All-purpose flour - 1/2 cup (60g)
  • Egg - 1 large
  • Panko breadcrumbs - 1 cup (100g)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 1/4 cup (60ml)
  • Lemon - 1 (for serving)

Steps

  1. Start by placing the pork loin chops between two sheets of plastic wrap and gently pound them to about 1/2 inch thickness using a meat mallet or rolling pin.
  2. In a shallow dish, mix the flour with salt, black pepper, garlic powder, and paprika.
  3. In another shallow bowl, beat the egg until well mixed.
  4. In a third bowl, place the panko breadcrumbs.
  5. Dredge each pork chop in the flour mixture, shaking off excess, then dip into the beaten egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
  6. Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded pork chops and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  7. Remove the schnitzels from the skillet and place them on a paper towel-lined plate to drain excess oil.
  8. Serve the pork schnitzels hot with lemon wedges on the side.
