Steps
- Start by placing the pork loin chops between two sheets of plastic wrap and gently pound them to about 1/2 inch thickness using a meat mallet or rolling pin.
- In a shallow dish, mix the flour with salt, black pepper, garlic powder, and paprika.
- In another shallow bowl, beat the egg until well mixed.
- In a third bowl, place the panko breadcrumbs.
- Dredge each pork chop in the flour mixture, shaking off excess, then dip into the beaten egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded pork chops and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- Remove the schnitzels from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve the pork schnitzels hot with lemon wedges on the side.
