  • Soy sauce (gluten-free) - 30 ml
  • Mirin - 15 ml
  • Ginger (fresh, grated) - 1 teaspoon
  • Garlic (minced) - 2 cloves
  • Green onions - 2 stalks
  • Carrot (sliced) - 1 medium
  • Baby bok choy - 100 grams
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Soft-boiled eggs - 2 (optional)

Steps

  1. Start by marinating the pork belly. Combine soy sauce, mirin, grated ginger, minced garlic, and a pinch of black pepper in a bowl. Add the pork belly, ensuring it is well coated, and let it marinate for at least 15 minutes.
  2. In a pot, bring chicken broth to a simmer over medium heat. Add the marinated pork belly and cook for 20 minutes until tender.
  3. While the pork is cooking, prepare the gluten-free ramen noodles according to package instructions. Drain and set aside.
  4. Remove the pork belly from the broth and slice it thinly. Set aside.
  5. In the same broth, add the sliced carrot and baby bok choy. Cook for about 3-4 minutes until the vegetables are tender.
  6. Add the cooked ramen noodles to the pot, stirring to combine. Taste and adjust seasoning with salt and pepper if needed.
  7. To serve, divide the noodle and vegetable mixture between two bowls. Top each bowl with sliced pork belly, a drizzle of sesame oil, and garnish with chopped green onions. If desired, add a soft-boiled egg to each bowl.
