- Mirin - 15 ml
- Ginger (fresh, grated) - 1 teaspoon
- Garlic (minced) - 2 cloves
- Green onions - 2 stalks
- Carrot (sliced) - 1 medium
- Baby bok choy - 100 grams
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Soft-boiled eggs - 2 (optional)
Steps
- Start by marinating the pork belly. Combine soy sauce, mirin, grated ginger, minced garlic, and a pinch of black pepper in a bowl. Add the pork belly, ensuring it is well coated, and let it marinate for at least 15 minutes.
- In a pot, bring chicken broth to a simmer over medium heat. Add the marinated pork belly and cook for 20 minutes until tender.
- While the pork is cooking, prepare the gluten-free ramen noodles according to package instructions. Drain and set aside.
- Remove the pork belly from the broth and slice it thinly. Set aside.
- In the same broth, add the sliced carrot and baby bok choy. Cook for about 3-4 minutes until the vegetables are tender.
- Add the cooked ramen noodles to the pot, stirring to combine. Taste and adjust seasoning with salt and pepper if needed.
- To serve, divide the noodle and vegetable mixture between two bowls. Top each bowl with sliced pork belly, a drizzle of sesame oil, and garnish with chopped green onions. If desired, add a soft-boiled egg to each bowl.
