- Hominy - 240 grams, drained and rinsed
- Dried oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1, juiced
- Fresh cilantro - for garnish
- Radishes - 4, thinly sliced, for garnish
- Avocado - 1, diced, for garnish
Steps
- In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Increase the heat to medium-high and add the cubed pork shoulder. Sear the pork on all sides until browned, approximately 5-7 minutes.
- Pour in the chicken broth, and add the drained hominy, oregano, cumin, chili powder, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the pork is tender.
