- Cooked white rice - 2 cups
- Pork tenderloin - 200 grams, diced
- Eggs - 2, beaten
- Green peas - 1/2 cup, frozen
- Carrot - 1 medium, diced
- Green onions - 2, chopped
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Salt - to taste
- Black pepper - to taste
- Cooking oil - 2 tablespoons
Steps
- Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat.
- Add the diced pork tenderloin and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil, garlic, and ginger. Sauté for 30 seconds until fragrant.
- Add the diced carrot and frozen peas to the skillet, cooking for about 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the cooked rice and the cooked pork back into the skillet. Pour in the soy sauce and sesame oil, stirring everything together until well combined and heated through.
- Season with salt and black pepper to taste. Stir in the chopped green onions before serving.
- Serve hot, garnished with additional green onions if desired.
