- Chicken breast - 200 grams, diced
- Andouille turkey sausage - 100 grams, sliced
- Okra - 100 grams, sliced
- Green bell pepper - 1, diced
- Onion - 1, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Canned diced tomatoes - 200 grams
- Chicken broth - 500 ml
- Vegetable oil - 2 tablespoons
- All-purpose flour - 2 tablespoons
- Cajun seasoning - 1 tablespoon
- Bay leaf - 1
- Cayenne pepper - 1/4 teaspoon (adjust to taste)
- Thyme - 1/2 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Cooked rice - for serving
- Chopped green onions - for garnish
Steps
- In a large pot, heat the vegetable oil over medium heat. Add the flour and stir continuously for about 10 minutes to make a dark roux, being careful not to burn it.
- Add the diced onion, green bell pepper, celery, and garlic to the roux. Sauté for about 5 minutes until softened.
- Stir in the diced chicken breast and turkey sausage. Cook for another 5 minutes until the chicken is browned.
- Add the sliced okra, canned diced tomatoes, chicken broth, Cajun seasoning, bay leaf, thyme, cayenne pepper, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce heat to low and let it simmer for about 20 minutes, stirring occasionally.
- Remove from heat, discard the bay leaf, and serve the gumbo over cooked rice. Garnish with chopped green onions.
