Ingredients

  • Chicken breast - 200 grams, diced
  • Andouille turkey sausage - 100 grams, sliced
  • Okra - 100 grams, sliced
  • Green bell pepper - 1, diced
  • Onion - 1, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Canned diced tomatoes - 200 grams
  • Chicken broth - 500 ml
  • Vegetable oil - 2 tablespoons
  • All-purpose flour - 2 tablespoons
  • Cajun seasoning - 1 tablespoon
  • Bay leaf - 1
  • Cayenne pepper - 1/4 teaspoon (adjust to taste)
  • Thyme - 1/2 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Cooked rice - for serving
  • Chopped green onions - for garnish

Steps

  1. In a large pot, heat the vegetable oil over medium heat. Add the flour and stir continuously for about 10 minutes to make a dark roux, being careful not to burn it.
  2. Add the diced onion, green bell pepper, celery, and garlic to the roux. Sauté for about 5 minutes until softened.
  3. Stir in the diced chicken breast and turkey sausage. Cook for another 5 minutes until the chicken is browned.
  4. Add the sliced okra, canned diced tomatoes, chicken broth, Cajun seasoning, bay leaf, thyme, cayenne pepper, salt, and black pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce heat to low and let it simmer for about 20 minutes, stirring occasionally.
  6. Remove from heat, discard the bay leaf, and serve the gumbo over cooked rice. Garnish with chopped green onions.
