Ingredients

  • Pork chops - 2 pieces (about 200g each)
  • Fresh sage leaves - 10 leaves
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Butter - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Remove the pork chops from the refrigerator and let them rest at room temperature for about 10 minutes.
  2. Season both sides of the pork chops with salt and black pepper.
  3. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  4. Add the pork chops to the skillet and sear for about 4-5 minutes on each side until they are golden brown and cooked through (internal temperature should reach 63°C).
  5. During the last minute of cooking, add the minced garlic and sage leaves to the skillet, allowing them to infuse their flavors into the pork.
  6. Once the pork is done, remove it from the skillet and let it rest on a plate.
  7. In the same skillet, reduce the heat to medium and add the butter and lemon juice, scraping up any brown bits from the bottom of the pan to create a sauce.
  8. Drizzle the sauce over the pork chops before serving.
