- Fresh sage leaves - 10 leaves
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Butter - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- Remove the pork chops from the refrigerator and let them rest at room temperature for about 10 minutes.
- Season both sides of the pork chops with salt and black pepper.
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Add the pork chops to the skillet and sear for about 4-5 minutes on each side until they are golden brown and cooked through (internal temperature should reach 63°C).
- During the last minute of cooking, add the minced garlic and sage leaves to the skillet, allowing them to infuse their flavors into the pork.
- Once the pork is done, remove it from the skillet and let it rest on a plate.
- In the same skillet, reduce the heat to medium and add the butter and lemon juice, scraping up any brown bits from the bottom of the pan to create a sauce.
- Drizzle the sauce over the pork chops before serving.
