Ingredients

  • Pork chops - 2 pieces (approximately 200g each)
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, thinly sliced
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30g, grated (optional for garnish)

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Season the pork chops with salt, black pepper, and Italian seasoning on both sides.
  3. Once the skillet is hot, add the pork chops and sear for 5-6 minutes on each side, or until they reach an internal temperature of 145°F (63°C).
  4. Remove the pork chops from the skillet and let them rest on a plate, covered with foil to keep warm.
  5. In the same skillet, add the remaining tablespoon of olive oil, then add sliced onion and bell peppers.
  6. Sauté the vegetables for about 5-7 minutes until they are tender and slightly caramelized.
  7. Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  8. Return the pork chops to the skillet, nestling them among the peppers for about 2 minutes to heat through.
  9. Serve the pork chops topped with the sautéed peppers and onions, garnished with grated Parmesan cheese if desired.
