Ingredients

  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Dijon mustard - 2 tablespoons
  • Heavy cream - 1/4 cup (60ml)
  • Chicken broth - 1/4 cup (60ml)
  • Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried thyme)
  • Lemon juice - 1 tablespoon

Steps

  1. Season the pork chops with salt, black pepper, and garlic powder on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the pork chops to the skillet and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 145°F or 63°C).
  4. Remove the pork chops from the skillet and set aside to rest on a plate.
  5. In the same skillet, reduce the heat to medium and add the Dijon mustard, heavy cream, chicken broth, thyme, and lemon juice.
  6. Whisk the mixture together until smooth, scraping up any brown bits from the bottom of the skillet.
  7. Simmer the sauce for about 3-5 minutes, until it thickens slightly.
  8. Return the pork chops to the skillet, spooning the sauce over them, and let them warm through for another 2 minutes.
