- Dijon mustard - 2 tablespoons
- Heavy cream - 1/4 cup (60ml)
- Chicken broth - 1/4 cup (60ml)
- Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried thyme)
- Lemon juice - 1 tablespoon
Steps
- Season the pork chops with salt, black pepper, and garlic powder on both sides.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the pork chops to the skillet and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 145°F or 63°C).
- Remove the pork chops from the skillet and set aside to rest on a plate.
- In the same skillet, reduce the heat to medium and add the Dijon mustard, heavy cream, chicken broth, thyme, and lemon juice.
- Whisk the mixture together until smooth, scraping up any brown bits from the bottom of the skillet.
- Simmer the sauce for about 3-5 minutes, until it thickens slightly.
- Return the pork chops to the skillet, spooning the sauce over them, and let them warm through for another 2 minutes.
- Serve hot, drizzled with the mustard sauce.
