Ingredients

  • Pork chops - 2 (about 200g each)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Dijon mustard - 2 tablespoons
  • Honey - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Garlic powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon (chopped, for garnish)

Steps

  1. Pat the pork chops dry with paper towels and season both sides with salt and black pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Once the oil is hot, add the pork chops and sear for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 63°C).
  4. While the pork chops are cooking, in a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, garlic powder, and paprika until well combined.
  5. When the pork chops are nearly done, pour the honey mustard mixture over the chops in the skillet, coating them evenly.
  6. Allow the sauce to simmer for an additional 2-3 minutes, ensuring the pork chops are well-glazed.
  7. Remove the skillet from heat and let the chops rest for a couple of minutes before serving.
  8. Garnish with chopped fresh parsley and serve with your choice of sautéed greens.
