Ingredients

  • Pork chops - 2 (approximately 200g each)
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Cherry tomatoes - 150g, halved
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Season both sides of the pork chops with salt and black pepper.
  3. Once the oil is hot, add the pork chops to the skillet and sear for 4-5 minutes on each side, or until they reach an internal temperature of 63°C (145°F).
  4. Remove the pork chops from the skillet and let them rest on a plate.
  5. In the same skillet, add the remaining tablespoon of olive oil and minced garlic, cooking for about 30 seconds until fragrant.
  6. Add the sliced zucchini and bell pepper to the skillet, and sauté for 5-7 minutes until they start to soften.
  7. Stir in the halved cherry tomatoes, thyme, and rosemary, cooking for an additional 2-3 minutes until the tomatoes are slightly blistered.
  8. Return the pork chops to the skillet, allowing them to warm through for 1-2 minutes.
  9. Serve the pork chops with the garlic and vegetable mixture on top.
