Ingredients
- Pork chops - 2 (approximately 200g each)
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Cherry tomatoes - 150g, halved
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Season both sides of the pork chops with salt and black pepper.
- Once the oil is hot, add the pork chops to the skillet and sear for 4-5 minutes on each side, or until they reach an internal temperature of 63°C (145°F).
- Remove the pork chops from the skillet and let them rest on a plate.
- In the same skillet, add the remaining tablespoon of olive oil and minced garlic, cooking for about 30 seconds until fragrant.
- Add the sliced zucchini and bell pepper to the skillet, and sauté for 5-7 minutes until they start to soften.
- Stir in the halved cherry tomatoes, thyme, and rosemary, cooking for an additional 2-3 minutes until the tomatoes are slightly blistered.
- Return the pork chops to the skillet, allowing them to warm through for 1-2 minutes.
- Serve the pork chops with the garlic and vegetable mixture on top.
