Ingredients

  • Pork chops - 2 pieces (about 200g each)
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium (any color), sliced
  • Spinach - 100g
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Parmesan cheese - 30g, grated (optional)

Steps

  1. Season the pork chops with salt, black pepper, and dried oregano on both sides.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  3. Add the pork chops to the skillet and sear for 4-5 minutes on each side until golden brown and cooked through. Remove them from the skillet and let them rest.
  4. In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant.
  5. Add the sliced zucchini and bell pepper to the skillet, cooking for about 5-7 minutes until tender.
  6. Stir in the spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
  7. Serve the pork chops on a plate, topped with the sautéed garlic and vegetables. Sprinkle with grated Parmesan cheese if desired.
