- Pork chops - 2 pieces (about 200g each)
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium (any color), sliced
- Spinach - 100g
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Parmesan cheese - 30g, grated (optional)
Steps
- Season the pork chops with salt, black pepper, and dried oregano on both sides.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the pork chops to the skillet and sear for 4-5 minutes on each side until golden brown and cooked through. Remove them from the skillet and let them rest.
- In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant.
- Add the sliced zucchini and bell pepper to the skillet, cooking for about 5-7 minutes until tender.
- Stir in the spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
- Serve the pork chops on a plate, topped with the sautéed garlic and vegetables. Sprinkle with grated Parmesan cheese if desired.
