Pork Chops with Garlic

Ingredients

  • Pork chops - 2 (about 200g each)
  • Garlic cloves - 4, minced
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Spinach - 200g, fresh (for serving)

Steps

  1. Pat the pork chops dry with paper towels and season both sides with salt and black pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  3. Add the pork chops to the skillet and sear for about 4-5 minutes on each side until they are golden brown and cooked through (internal temperature should reach 145°F or 63°C).
  4. Remove the pork chops from the skillet and let them rest on a plate, covered with foil.
  5. In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.
  6. Add 1 tablespoon of butter and the fresh thyme to the skillet, stirring to combine with the garlic.
  7. Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes. Season with a pinch of salt and pepper.
  8. Serve the pork chops topped with the garlic butter and sautéed spinach on the side.
