Pork Chops with Garlic

- Pork chops - 2 (about 200g each)
- Garlic cloves - 4, minced
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Spinach - 200g, fresh (for serving)
Steps
- Pat the pork chops dry with paper towels and season both sides with salt and black pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- Add the pork chops to the skillet and sear for about 4-5 minutes on each side until they are golden brown and cooked through (internal temperature should reach 145°F or 63°C).
- Remove the pork chops from the skillet and let them rest on a plate, covered with foil.
- In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add 1 tablespoon of butter and the fresh thyme to the skillet, stirring to combine with the garlic.
- Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes. Season with a pinch of salt and pepper.
- Serve the pork chops topped with the garlic butter and sautéed spinach on the side.
