Ingredients

  • Pork Chops - 2 pieces (200g each)
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Olive Oil - 2 tablespoons
  • Fresh Cranberries - 150g
  • Water - 120ml
  • Erythritol (or sweetener of choice) - 2 tablespoons
  • Apple Cider Vinegar - 1 tablespoon
  • Thyme (fresh) - 1 teaspoon, chopped

Steps

  1. Season the pork chops with salt and black pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  3. In the same skillet, add fresh cranberries, water, erythritol, apple cider vinegar, and thyme. Bring to a boil, then reduce the heat to low and simmer for about 10 minutes, or until the cranberries burst and the sauce thickens slightly.
  4. Serve the pork chops drizzled with the cranberry sauce, garnished with additional thyme if desired.
