Ingredients
- Pork chops - 2 (about 200g each)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Onion - 1 medium, sliced
- Apple - 1 medium, cored and sliced
- Fresh thyme - 1 teaspoon, chopped (or 1/2 teaspoon dried thyme)
- Chicken broth - 1/2 cup
- Butter - 1 tablespoon
Steps
- Season the pork chops with salt, black pepper, and garlic powder on both sides.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the pork chops to the skillet and sear for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 145°F or 63°C).
- Remove the pork chops from the skillet and set aside to rest.
- In the same skillet, add the remaining tablespoon of olive oil and the sliced onions. Cook for about 3-4 minutes until they start to soften.
- Add the sliced apple and thyme to the skillet, stirring occasionally, and cook for another 5 minutes until the apples are tender and the onions are caramelized.
- Pour in the chicken broth and bring to a gentle simmer, scraping any browned bits from the bottom of the skillet.
- Return the pork chops to the skillet, spooning the apple and onion mixture over them. Add the butter and let it melt, cooking for an additional 2-3 minutes to heat through.
- Serve the pork chops topped with the apple and onion mixture.
