Ingredients

  • Pork chops - 2 (about 200g each)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion - 1 medium, sliced
  • Apple - 1 medium, cored and sliced
  • Fresh thyme - 1 teaspoon, chopped (or 1/2 teaspoon dried thyme)
  • Chicken broth - 1/2 cup
  • Butter - 1 tablespoon

Steps

  1. Season the pork chops with salt, black pepper, and garlic powder on both sides.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  3. Add the pork chops to the skillet and sear for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 145°F or 63°C).
  4. Remove the pork chops from the skillet and set aside to rest.
  5. In the same skillet, add the remaining tablespoon of olive oil and the sliced onions. Cook for about 3-4 minutes until they start to soften.
  6. Add the sliced apple and thyme to the skillet, stirring occasionally, and cook for another 5 minutes until the apples are tender and the onions are caramelized.
  7. Pour in the chicken broth and bring to a gentle simmer, scraping any browned bits from the bottom of the skillet.
  8. Return the pork chops to the skillet, spooning the apple and onion mixture over them. Add the butter and let it melt, cooking for an additional 2-3 minutes to heat through.
  9. Serve the pork chops topped with the apple and onion mixture.
