Ingredients

  • Pork chops - 2 (about 200g each)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary - 1 teaspoon, chopped
  • Garlic - 2 cloves, minced
  • Apple (medium, tart variety) - 1, diced
  • Apple cider vinegar - 2 tablespoons
  • Unsweetened apple sauce - 1/4 cup
  • Mustard (Dijon or whole grain) - 1 tablespoon

Steps

  1. Season the pork chops with salt, black pepper, and chopped rosemary on both sides.
  2. Heat the olive oil in a skillet over medium-high heat. Once hot, add the pork chops and sear for 5-6 minutes on each side until golden brown and cooked through.
  3. Remove the pork chops from the skillet and set aside to rest while preparing the glaze.
  4. In the same skillet, reduce the heat to medium and add minced garlic, sautéing for about 30 seconds until fragrant.
  5. Add the diced apple and cook for about 5 minutes until softened.
  6. Stir in the apple cider vinegar and unsweetened apple sauce, scraping any browned bits from the bottom of the skillet.
  7. Add the mustard and stir until well combined. Allow the glaze to simmer for an additional 2-3 minutes until slightly thickened.
  8. Return the pork chops to the skillet, turning to coat them in the apple glaze. Cook for another minute to heat through.
  9. Serve the pork chops with the apple glaze drizzled on top.
