Ingredients
- Pork chops - 2 (about 200g each)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh rosemary - 1 teaspoon, chopped
- Garlic - 2 cloves, minced
- Apple (medium, tart variety) - 1, diced
- Apple cider vinegar - 2 tablespoons
- Unsweetened apple sauce - 1/4 cup
- Mustard (Dijon or whole grain) - 1 tablespoon
Steps
- Season the pork chops with salt, black pepper, and chopped rosemary on both sides.
- Heat the olive oil in a skillet over medium-high heat. Once hot, add the pork chops and sear for 5-6 minutes on each side until golden brown and cooked through.
- Remove the pork chops from the skillet and set aside to rest while preparing the glaze.
- In the same skillet, reduce the heat to medium and add minced garlic, sautéing for about 30 seconds until fragrant.
- Add the diced apple and cook for about 5 minutes until softened.
- Stir in the apple cider vinegar and unsweetened apple sauce, scraping any browned bits from the bottom of the skillet.
- Add the mustard and stir until well combined. Allow the glaze to simmer for an additional 2-3 minutes until slightly thickened.
- Return the pork chops to the skillet, turning to coat them in the apple glaze. Cook for another minute to heat through.
- Serve the pork chops with the apple glaze drizzled on top.
