Ingredients

  • Pork chops - 2 (approximately 200g each)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 1 teaspoon, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Butter - 1 tablespoon
  • Potatoes - 300g, peeled and cubed
  • Milk - 1/4 cup
  • Salt - to taste (for mashed potatoes)

Steps

  1. In a small bowl, mix together the minced garlic, chopped rosemary, thyme, paprika, salt, black pepper, olive oil, and lemon juice to create a marinade.
  2. Place the pork chops in a resealable bag or a shallow dish and pour the marinade over them, ensuring they are well coated. Marinate in the refrigerator for at least 15 minutes.
  3. While the pork is marinating, bring a pot of salted water to a boil and add the cubed potatoes. Cook until tender, about 15 minutes.
  4. Drain the potatoes and return them to the pot. Add milk, salt, and black pepper to taste, and mash until smooth and creamy.
  5. Heat a skillet over medium-high heat and add the marinated pork chops. Cook for 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C).
  6. Add butter to the skillet during the last minute of cooking, spooning it over the chops for added flavor.
  7. Serve the pork chops hot with a generous scoop of garlic mashed potatoes on the side.
