Ingredients
- Pork chops - 2 (approximately 200g each)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 1 teaspoon, chopped
- Fresh thyme - 1 teaspoon, chopped
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Butter - 1 tablespoon
- Potatoes - 300g, peeled and cubed
- Milk - 1/4 cup
- Salt - to taste (for mashed potatoes)
- Black pepper - to taste (for mashed potatoes)
Steps
- In a small bowl, mix together the minced garlic, chopped rosemary, thyme, paprika, salt, black pepper, olive oil, and lemon juice to create a marinade.
- Place the pork chops in a resealable bag or a shallow dish and pour the marinade over them, ensuring they are well coated. Marinate in the refrigerator for at least 15 minutes.
- While the pork is marinating, bring a pot of salted water to a boil and add the cubed potatoes. Cook until tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Add milk, salt, and black pepper to taste, and mash until smooth and creamy.
- Heat a skillet over medium-high heat and add the marinated pork chops. Cook for 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C).
- Add butter to the skillet during the last minute of cooking, spooning it over the chops for added flavor.
- Serve the pork chops hot with a generous scoop of garlic mashed potatoes on the side.
