Ingredients

  • Pork shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, diced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime juice - 2 tablespoons
  • Corn tortillas - 4
  • Fresh cilantro - 1/4 cup, chopped
  • Radishes - 4, thinly sliced
  • Avocado - 1, sliced

Steps

  1. In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Season the pork shoulder with salt, black pepper, cumin, oregano, and chili powder. Place the pork shoulder in the skillet and sear on all sides until browned, about 8-10 minutes.
  4. Pour in enough water to cover the pork halfway, then add the lime juice. Bring to a boil, then reduce the heat to low and cover.
  5. Simmer the pork for about 2 hours or until the meat is tender and easily shredded with a fork.
  6. Once cooked, remove the pork from the skillet and shred it with two forks. Return the shredded pork to the skillet to soak up the juices for an additional 10 minutes.
  7. While the pork absorbs the juices, warm the corn tortillas in a separate skillet over medium heat until soft and pliable.
  8. To assemble the tacos, place a generous portion of shredded pork in each tortilla, then top with chopped cilantro, sliced radishes, and avocado.
  9. Serve immediately and enjoy!
