Ingredients

  • Pork shoulder - 500 grams
  • Orange juice - 120 ml
  • Lime juice - 30 ml
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, diced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaves - 2
  • Water - 240 ml
  • Corn tortillas - 4
  • Fresh cilantro - 30 grams, chopped
  • Red onion - 30 grams, diced
  • Avocado - 1 medium, sliced

Steps

  1. Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano.
  2. In a large pot, combine the pork, orange juice, lime juice, minced garlic, diced onion, bay leaves, and water.
  3. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for about 2 hours until the pork is fork-tender.
  4. Remove the pork chunks from the pot and shred the meat using two forks.
  5. Heat a non-stick skillet over medium-high heat and add the shredded pork, cooking until the edges are crispy, about 5-10 minutes.
  6. Warm the corn tortillas in a separate skillet or microwave.
  7. Serve the crispy pork carnitas in tortillas, topped with fresh cilantro, diced red onion, and avocado slices.
