Ingredients

  • Pork belly - 300 grams
  • Olive oil - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lettuce leaves (for wrapping) - 4 large
  • Avocado - 1 medium, sliced
  • Radishes - 4, thinly sliced
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a bowl, mix olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper to create a marinade.
  3. Cut the pork belly into bite-sized cubes and coat them with the marinade. Let it sit for at least 15 minutes.
  4. Place the marinated pork belly in a single layer on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 45 minutes, or until the pork belly is crispy and cooked through, turning halfway through the cooking time.
  6. While the pork is baking, prepare the toppings by slicing the avocado, radishes, and chopping the cilantro.
  7. Remove the pork belly from the oven and let it rest for a few minutes.
  8. To assemble, take a lettuce leaf, fill it with crispy pork belly, and top with avocado slices, radish, and cilantro.
  9. Serve with lime wedges on the side for squeezing over the tacos.
