  • Kosher salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Liquid smoke - 1 teaspoon
  • Sugar-free barbecue sauce - 100 grams
  • Butter - 30 grams
  • Apple cider vinegar - 1 tablespoon

Steps

  1. Preheat your oven to 120°C (250°F).
  2. Cut the pork belly into 2.5 cm (1 inch) cubes and place them in a large mixing bowl.
  3. In a separate bowl, mix together the kosher salt, black pepper, paprika, garlic powder, and onion powder.
  4. Sprinkle the spice mixture over the pork belly cubes and toss to coat them evenly.
  5. Place the seasoned pork belly on a rack in a baking pan and smoke for 2-3 hours, until tender.
  6. Remove the pork belly from the oven and increase the temperature to 190°C (375°F).
  7. In a saucepan, combine the sugar-free barbecue sauce, butter, liquid smoke, and apple cider vinegar, and heat until melted.
  8. Toss the smoked pork belly in the sauce until well coated, then return to the oven for an additional 30-45 minutes until caramelized.
