  • Tomato paste - 2 tablespoons
  • Chicken broth - 250 ml
  • Brown sugar - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced pork shoulder and cook until browned on all sides, about 5-7 minutes.
  3. Add the chopped onion and minced garlic to the skillet, sautéing until the onion becomes translucent, about 3-4 minutes.
  4. Stir in the tomato paste, smoked paprika, brown sugar, salt, and black pepper, cooking for another 2 minutes.
  5. Pour in the chicken broth and apple cider vinegar, bringing the mixture to a gentle simmer.
  6. Add the rinsed navy beans to the skillet, stirring to combine all ingredients.
  7. Cover the skillet and let it simmer on low heat for about 30 minutes, stirring occasionally.
  8. After 30 minutes, check the seasoning and adjust salt and pepper if necessary.
  9. Serve hot, garnished with fresh parsley if desired.
