  • Canned white beans - 1 cup (240 grams), drained and rinsed
  • Carrot - 1 medium, diced
  • Celery - 1 medium stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Chicken broth - 2 cups (480 ml)
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon (adjust to taste)
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced pork and cook until browned on all sides, about 5-7 minutes.
  2. Add the chopped onion, diced carrot, and diced celery to the pot. Sauté for another 5 minutes until the vegetables are softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
