- Carrot - 1 medium, diced
- Celery - 1 medium stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Chicken broth - 2 cups (480 ml)
- Olive oil - 1 tablespoon
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon (adjust to taste)
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced pork and cook until browned on all sides, about 5-7 minutes.
- Add the chopped onion, diced carrot, and diced celery to the pot. Sauté for another 5 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and add the white beans, dried thyme, bay leaf, salt, and black pepper. Bring the soup to a boil.
- Reduce the heat to low and let it simmer for 25-30 minutes, uncovered, until the pork is tender and the flavors meld together.
- Remove the bay leaf and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
