Ingredients

  • Pork tenderloin - 250 grams
  • Apple cider - 150 ml
  • Fresh apples (preferably Granny Smith) - 2 medium, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Thyme - 1 teaspoon, fresh or dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Butter - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the pork tenderloin with salt and black pepper, then sear it in the hot skillet for about 3-4 minutes on each side until browned.
  3. Remove the pork from the skillet and set aside on a plate.
  4. In the same skillet, add the diced onion and minced garlic, cooking until the onion is translucent, about 3 minutes.
  5. Add the sliced apples and thyme to the skillet, stirring occasionally for 2 minutes until the apples begin to soften.
  6. Pour in the apple cider and bring to a simmer, scraping the bottom of the skillet to deglaze.
  7. Return the pork to the skillet, reduce the heat to low, cover, and cook for an additional 10-12 minutes, or until the pork reaches an internal temperature of 63°C (145°F).
  8. Remove the pork from the skillet and let it rest for 5 minutes before slicing.
  9. Stir in the butter into the apple cider sauce, mixing until melted and combined.
  10. Serve the sliced pork drizzled with the apple cider sauce and apples.
