- Pork tenderloin - 250 grams
- Apple cider - 150 ml
- Fresh apples (preferably Granny Smith) - 2 medium, sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Thyme - 1 teaspoon, fresh or dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Butter - 1 tablespoon
Steps
- Heat the olive oil in a large skillet over medium heat.
- Season the pork tenderloin with salt and black pepper, then sear it in the hot skillet for about 3-4 minutes on each side until browned.
- Remove the pork from the skillet and set aside on a plate.
- In the same skillet, add the diced onion and minced garlic, cooking until the onion is translucent, about 3 minutes.
- Add the sliced apples and thyme to the skillet, stirring occasionally for 2 minutes until the apples begin to soften.
- Pour in the apple cider and bring to a simmer, scraping the bottom of the skillet to deglaze.
- Return the pork to the skillet, reduce the heat to low, cover, and cook for an additional 10-12 minutes, or until the pork reaches an internal temperature of 63°C (145°F).
- Remove the pork from the skillet and let it rest for 5 minutes before slicing.
- Stir in the butter into the apple cider sauce, mixing until melted and combined.
- Serve the sliced pork drizzled with the apple cider sauce and apples.
