- Pork chops - 2 (about 200g each)
- Apples (preferably Granny Smith) - 2 medium, cored and sliced
- Onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chicken broth - 200 ml
- Dijon mustard - 1 tablespoon
- Thyme (fresh or dried) - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese - 30g, grated
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet over medium heat, heat the olive oil and sear the pork chops for about 3-4 minutes on each side until browned. Remove and set aside.
- In the same skillet, add the sliced onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
- Add the sliced apples to the skillet, and cook for about 3-4 minutes until slightly softened.
- Stir in the chicken broth, Dijon mustard, thyme, salt, and black pepper. Bring to a simmer.
- In a baking dish, arrange the seared pork chops and pour the apple and onion mixture over the top.
- Sprinkle grated Parmesan cheese over the entire dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes until the cheese is golden and the pork is cooked through.
- Let it rest for a few minutes before serving.
