Ingredients

  • Pork chops - 2 (about 200g each)
  • Apples (preferably Granny Smith) - 2 medium, cored and sliced
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Chicken broth - 200 ml
  • Dijon mustard - 1 tablespoon
  • Thyme (fresh or dried) - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30g, grated

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet over medium heat, heat the olive oil and sear the pork chops for about 3-4 minutes on each side until browned. Remove and set aside.
  3. In the same skillet, add the sliced onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  4. Add the sliced apples to the skillet, and cook for about 3-4 minutes until slightly softened.
  5. Stir in the chicken broth, Dijon mustard, thyme, salt, and black pepper. Bring to a simmer.
  6. In a baking dish, arrange the seared pork chops and pour the apple and onion mixture over the top.
  7. Sprinkle grated Parmesan cheese over the entire dish.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 5-10 minutes until the cheese is golden and the pork is cooked through.
  10. Let it rest for a few minutes before serving.
