- 1 tablespoon soy sauce - 15 milliliters
- 1 tablespoon olive oil - 15 milliliters
- 1 clove garlic, minced - 1 clove
- 1/2 teaspoon ground cumin - 1 gram
- 1/2 teaspoon salt - 3 grams
- 1/4 teaspoon black pepper - 1 gram
- 1/4 cup pomegranate seeds - 40 grams
- 1 tablespoon chopped fresh parsley - 5 grams
Steps
- In a bowl, mix pomegranate juice, honey, soy sauce, minced garlic, ground cumin, salt, and black pepper to create the marinade.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
- Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade (reserve the marinade) and place the chicken in the skillet. Cook for about 5-7 minutes on each side, or until the chicken is browned and cooked through (internal temperature should reach 75°C).
- While the chicken is cooking, pour the reserved marinade into a small saucepan and bring to a boil. Reduce the heat and let it simmer for 5-7 minutes, or until it thickens slightly.
- Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Drizzle the thickened pomegranate glaze over the chicken.
