- Eggplant - 1 medium (about 250g)
- Tahini - 2 tablespoons (30g)
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons (30ml)
- Olive oil - 2 tablespoons (30ml) plus extra for drizzling
- Salt - 1/2 teaspoon (3g)
- Ground cumin - 1/4 teaspoon (1g)
- Pita bread - 2 large
- Fresh parsley - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplant in half lengthwise and place it on a baking sheet, cut side up.
- Drizzle 1 tablespoon of olive oil over the eggplant and sprinkle with a pinch of salt.
- Roast the eggplant in the preheated oven for about 25-30 minutes, or until the flesh is soft and slightly charred.
- Remove the eggplant from the oven and allow it to cool for a few minutes.
- Scoop the flesh of the roasted eggplant into a mixing bowl and discard the skin.
- Add tahini, minced garlic, lemon juice, the remaining tablespoon of olive oil, salt, and ground cumin to the bowl.
- Using a fork or a food processor, blend the mixture until it reaches a creamy consistency.
- Taste and adjust seasoning if needed.
- Meanwhile, warm the pita bread in the oven for the last 5 minutes of the eggplant roasting time.
- Cut the pita into wedges and serve alongside the baba ganoush, garnished with fresh parsley and a drizzle of olive oil.
