Ingredients
- Pork shoulder - 300 grams
- Pineapple juice - 120 ml
- Soy sauce (Halal) - 30 ml
- Brown sugar - 25 grams
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Olive oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Pineapple chunks - 100 grams
- Green onions (sliced) - 2 tablespoons for garnish
Steps
- In a medium bowl, mix the pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, and black pepper to create the marinade.
- Cut the pork shoulder into bite-sized pieces and add it to the marinade. Allow it to marinate for at least 30 minutes, preferably in the refrigerator for more flavor.
- Heat the olive oil in a skillet over medium heat. Remove the pork from the marinade (reserve the marinade) and sear the pork pieces until browned on all sides, about 5-7 minutes.
- Pour the reserved marinade into the skillet with the pork and bring it to a simmer. Cook for an additional 10-15 minutes, stirring occasionally, until the pork is cooked through and the sauce has thickened slightly.
- Add the pineapple chunks to the skillet in the last 5 minutes of cooking, allowing them to warm through.
- Serve the Pineapple BBQ Pork garnished with sliced green onions and enjoy with rice or a fresh salad.
