Ingredients

  • Cauliflower rice - 2 cups
  • Pine nuts - 1/4 cup
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a skillet over medium heat, add 1 tablespoon of olive oil and toast the pine nuts until golden brown, about 3-4 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add another tablespoon of olive oil and sauté the diced onion, carrot, and celery until softened, about 5-7 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the cauliflower rice, salt, and black pepper, cooking for another 5-6 minutes until the cauliflower is tender.
  5. Remove the skillet from heat and fold in the toasted pine nuts and chopped parsley until well combined.
  6. Serve warm as a delicious side dish.
