- Cauliflower rice - 2 cups
- Pine nuts - 1/4 cup
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a skillet over medium heat, add 1 tablespoon of olive oil and toast the pine nuts until golden brown, about 3-4 minutes. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and sauté the diced onion, carrot, and celery until softened, about 5-7 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the cauliflower rice, salt, and black pepper, cooking for another 5-6 minutes until the cauliflower is tender.
- Remove the skillet from heat and fold in the toasted pine nuts and chopped parsley until well combined.
- Serve warm as a delicious side dish.
