Ingredients

  • Pine nuts - 100 grams
  • Raw honey - 60 ml
  • Coconut oil - 1 tablespoon
  • Sea salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Baking soda - 1/4 teaspoon

Steps

  1. Prepare a baking sheet by lining it with parchment paper and lightly greasing it with coconut oil.
  2. In a medium saucepan, combine the raw honey and coconut oil over medium heat, stirring until melted and combined.
  3. Add the sea salt and vanilla extract to the mixture, stirring well to incorporate.
  4. Once the mixture is bubbling, add the pine nuts and stir continuously for about 5-7 minutes, until the nuts are golden brown.
  5. Remove the saucepan from heat and quickly stir in the baking soda. The mixture will bubble up, so be cautious.
  6. Pour the brittle mixture onto the prepared baking sheet and spread it out evenly using a spatula.
  7. Allow the brittle to cool at room temperature for about 10-15 minutes until it hardens.
  8. Once cooled, break the brittle into pieces and serve.
