Ingredients
- Basmati rice - 1 cup
- Vegetable broth - 2 cups
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Peas - 1/2 cup (fresh or frozen)
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon (adjust to taste)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes. Drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cumin seeds, cooking for another minute until fragrant.
- Add the diced carrot and bell pepper to the saucepan, cooking for 5 minutes until the vegetables start to soften.
- Sprinkle in the turmeric powder, black pepper, and salt, mixing well to combine with the vegetables.
- Add the drained rice to the saucepan, stirring gently to coat the rice with the spice mixture for about 2 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, turn off the heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and gently fold in the peas.
- Serve warm, garnished with fresh parsley.
