Ingredients

  • Basmati rice - 1 cup
  • Vegetable broth - 2 cups
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Peas - 1/2 cup (fresh or frozen)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon (adjust to taste)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes. Drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and cumin seeds, cooking for another minute until fragrant.
  4. Add the diced carrot and bell pepper to the saucepan, cooking for 5 minutes until the vegetables start to soften.
  5. Sprinkle in the turmeric powder, black pepper, and salt, mixing well to combine with the vegetables.
  6. Add the drained rice to the saucepan, stirring gently to coat the rice with the spice mixture for about 2 minutes.
  7. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
  8. Once cooked, turn off the heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and gently fold in the peas.
  9. Serve warm, garnished with fresh parsley.
